  • Observed ready to eat food not date marked for 7 days discard. No consistent date marking. Corrective action: Date mark with a 7 day discard with day 1 being the day of preparation. Discussed with manager about time and temperature cold holding procedures.
  • Observed no hot water at handwashing sink. Corrective action: Discussed with person in charge proper hand sink temperature requirements.

  • Observed missing drip pan to prevent grease from dripping on food, equipment, or walls, etc. Corrective action: Discussed with person in charge to have something in place to catch grease.

  • Observed ready to eat food not date marked for 7 days discard. Corrective action: Date mark with a 7 day discard with day 1 being the day of preparation. Discussed with person in charge.
  • Observed in use utensils (tongs) stored with food contact surface in position for potential contamination. Corrective action: Discussed with person in charge about proper storage on in utensils.
  • Observed reach in door not shutting properly. Condensation accumulation dripping on food and on shelves. Corrective action: Person in charge to have door fixed
  • Observed no air gap for back flow prevention at 3 compartment sink. Corrective action: person in charge to correct by creating at least an one inch air gap.
  • Observed employee cell phone on charger in kitchen. Corrective action: Discussed with person in charge to have designated area for employee personal items away from kitchen and food preparation.
  • Observed employee food stored without separation in walk in. Corrective action: Discussed with person in charge to have designated area in walk in for clear separation for employee food.
