  • All food stored in sushi case on line and ready to serve must be 41 degrees or lower. Change procedures so that enough time is available to receive, prep and store food to reach 41 degrees.
  • Cooling after prepping must happen before food is served.
  • Cooked rice is a potentially hazardous food. Therefore, it should be stored hot or cold. If it is stored at room temperature, as in some sushi facilities, then you must create a time log to monitor it. Food can only sit out a maximum of four hours at room temperature and all leftover must be discarded.
  • Invert all clean storage
  • Do not reuse old retail food containers
  • Provide test strips
  • Clean equipment surfaces
