• Observed raw shelled eggs stored above ready-to-eat item in walk-in cooler. Items must be stored in the correct descending order based on final cook temperature. Item was corrected onsite.
• Observed build up of food debris on can opener blade and deli sliced. All food contact surfaces must be cleaned and sanitized. Items were corrected onsite.
• Observed wiping cloth quaternary ammonium compound sanitizing solution not at proper strength. Concentration well above 500 parts per million. Must dilute solution.
• Observed cooked potentially hazardous chicken not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours (see temp observations). Items was discarded onsite. Education provided.
• A follow-up inspection will be held Dec. 12.

• Observed no Certified Food Safety Manager Certification displayed within the facility. Legal notice issued advising the facility to obtain documentation of enrollment in a food safety manager course or a food safety manager certificate within 10 business days.
• Observed no soap at two hand washing sinks. Advised PIC that soap must be available at the hand washing sink.
• Observed no paper towels or drying provision available at two hand washing sinks. Advised PIC that paper towels or drying provision must be available at the hand washing sink.
• Observed many containers of butter crème frosting stored on the floor. Food must be protected from contamination by storing the food in a clean, dry location; where it is not exposed to splash, dust, or other contamination; and at least 6 inches above the floor. Advised PIC to store containers of butter crème frosting 6 inches above the floor.
• Hand washing signage missing at two hand washing sinks. A sign or poster that notifies food employees to wash their hands must be provided at all hand washing sinks used by food employees and shall be clearly visible to food employees.
• Observed no toilet tissue in the bathroom. PIC advised that toilet tissue must be made available within the bathroom.
• Observed dirty flooring throughout the main kitchen and front food service area. The physical facility must be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
