2-2B, Violation of Code: [.03(5)(j)1&2 ] Employee personal drink cups stored above food prep areas. Employee personal drink cups must be stored in designated area separate from food prep areas and/or storage of single use articles to prevent possible contamination. Cups were removed from prep area during inspection. Corrected On-Site. New Violation.
6-1A, Violation of Code: [.04(6)(f) ] Cheese cake cold holding in front register reach-in at 48 F. Ambient air temp of cooler at 48 F. PHF that are to be cold held must be held at 41 F or below. Cheese cake discarded. All products were removed from cooler until the cooler can be inspected by maintenance. Corrected On-Site. New Violation.Â
6-1C, Violation of Code: [.04(6)(d) ] Green beans cooling in walk-in cooler for 2.5 hours at 110 F. Potentially hazardous foods should be cooled from 135 F to 70 F in two hours and cooled to 41 F or below within a total of six hours. PIC was instructed in proper cooling methods (shallow pans, ice baths, stirring during cooling, etc.) Green beans were discarded. Corrected On-Site. New Violation.Â
11A, Violation of Code: [.04(6)(e) ] Green beans cooling in walk-in cooler in deep pan. Foods should be cooled in shallow pans, using ice baths, loosely covered or using ice as an ingredient during the cooking process to ensure proper cooling procedures. At beginning of inpsection, observed employee drink from an unapproved cup in kitchen area. Employee corrected. Observed uncovered cup and employee food being stored under dishwash station. Employees must not eat in kitchen area. Observed employee personal drinks (opened water bottles and frosty being stored with and above customer foods). Items removed. Must ensure employees drink from single service cups with lids and straws. All drinks must be stored in an approved container (single service cup with lid and straw). Employees are not allowed to eat in kitchen area. Corrected On-Site. Repeat Violation.
4-2B, Violation of Code: [.05(6)(n) ] Food contact surfaces not being properly sanitized. Observed employee at dishwash station rinse dishes off and then stored away as clean (placed with clean dishes). Employee corrected. Dishes properly cleaned and sanitized. Advised person in charge to ensure proper wash, rinse, and sanitize procedure is used. Corrected On-Site. New Violation.
5-1B, Violation of Code: [.04(5)(f) ] Potentially hazardous foods reheated for hot-holding not reheated so that all parts of the food reach a temperature of at least 165oF for 15 seconds. Two conainers of cheese dip not properly reheated to 165 degrees Fahrenheit or above before being served (internal temperature of cheese dip was 155-158 degrees Fahrenheit). Employee corrected. Cheese dip properly reheated to 165 degrees Fahrenheit or above before being served. Corrected On-Site. New Violation.Â
14B, Violation of Code: [.05(10)(a) ] After cleaning and sanitizing, equipment and utensils not air-dried. Corrected employee. Must ensure all equipment and utensils are air-dried. Corrected On-Site. New Violation.Â
14D, Violation of Code: [.04(4)(n) ] Observed employee at dishwash station handle dirty dishes and then handle clean dishes with same pair of gloves. Employee corrected.
