Violations: 2-2D, Violation of Code: [.06(2)(o) ] Observed employee using hand sink to dump liquids from kitchen area, also paper towel debris in multiple sinks. Hand sinks should be used for hand washing only, no other use is permitted. PIC advised to sanitize hand wash sinks. Corrected On-Site. New Violation. 17D, Violation of Code: [.07(3)(f) ] Dim lighting in walk-in freezer making it difficult to assess proper cleaning under shelving units. Lighting should be adequate to ensure proper cleaning/visual access to stored goods. PIC advised that maintenance will be contacted to repair light fixture. New Violation.

Violations: 6-1A, Violation of Code: [.04(6)(f) ] Multiple PHF's in walk-in cooler (see temperature observations) not being cold held at 41 F or below. PHF's that are to be cold held must be held at 41 F or below. PHF's held above 41 F were discarded at time of inspection. Corrected On-Site. Repeat Violation. 11A, Violation of Code: [.04(6)(e) ] Multiple sauces cooling in large containers with tightly sealed lids (see temperature observations). Foods should be cooled in shallow pans, using ice baths/ice paddles, loosely covered during the cooling process or by using ice as an ingredient during the cooling process. PHF's should be cooled from 135 F to 70 F in two hours and from 70 F to 41 F in an additional 4 hours (6 hours total). PIC was instructed on proper cooling methods/time frames for cooling. Corrected On-Site. New Violation. 15A, Violation of Code: [.05(6)(q) ] Walk-in cooler and prep cooler not maintaining 41 F or below. All cooling units must be capable of maintaining PHF's at 41 F or below. Maintenance contractor was called during inspection and units were repaired and keeping temperatures of 41 F and below during inspection. Corrected On-Site. New Violation.
