Violations: 2-2B, Violation of Code: [.03(5)(j)1&2 ] Employee drink cups stored in drink display cooler with sauces/bottled water/bottled drinks. Employee personal drinks should be stored separate from foods and or single use articles and be kept in disposable cup with tight fitting lid/straw. Drinks were removed from display cooler during inspection. Corrected On-Site. New Violation. 2-2D, Violation of Code: [.06(2)(o) ] Rear hand washing sink being used to thaw meats. Hand sinks should be used for hand washing only, no other use is permitted. Meat was removed from hand sink and sink was sanitized during inspection. Corrected On-Site. New Violation. 11C, Violation of Code: [.04(6)(c)] Raw chicken thawing in hand wash sink. Preferred methods of thawing include: thaw under running water, in cooling unit or as part of the cooking process. Chicken was removed from sink and placed in cooler to thaw. Corrected On-Site. New Violation. 12A, Violation of Code: [.04(4)(u) ] Bottled water, bulk soy sauce & bulk cooking oil stored in direct contact with the floor. Food items should be stored at least 6" off the floor at all times to prevent possible contamination. Items were removed off the floor during inspection. Corrected On-Site. New Violation. 12D, Violation of Code: [.04(4)(g) ] Vegetable sink being used to store dirty dishes and sanitizer bucket. Vegetable sink should be used for its intended purpose only, no other use is permitted. Vegetable sink was sanitized and dirty dishes/sanitizer bucket was removed during inspection.  Corrected On-Site.  New Violation.

Violations: 1-2, Violation of Code: [.03(3)(a)-(d) ] Facility in operation for greater than 90 days with no CFSM. Facilities have 90 days from date of opening to have an employee take the CFSM class or hire an employee that has taken the CFSM class. PIC advised that she will sign up for the March 19-20, 2012 CFSM class at Gwinnett EH. A follow-up will be required to ensure that the facility has a CFSM employed. New Violation. 6-2, Violation of Code: [.04(6)(g) ] Refrigerated, ready-to-eat, potentially hazardous food prepared and held in the facility for more than 24 hours not clearly marked to indicate the date by which the food must be consumed, sold or discarded. Foods were properly date marked by PIC during inspection. PIC was reminded that all items cooked or packages opened for over 24 hours must be properly date marked. Corrected On-Site. Repeat Violation. Violation of Code: [.04(6)(h) ] Potentially hazardous foods that were properly date marked were not discarded within the required seven days. Foods that are date marked must be consumed, sold or discarded by the end of the seven day holding period. Foods were discarded during inspection. Corrected On-Site. New Violation.
