Foods must be kept covered when not involved in active preparation/cooking process. Cooling foods should be loosely covered. Foods were covered during inspection. Corrected On-Site. New Violation. 14A, Violation of Code: [.04(4)(k) ] In-use utensils stored in water 70 F. In-use utensils should be stored in water at least 135 F or under running water with sufficient pressure to clean debris off food contact area of utensil. Water was turned on to heat to 135 F during inspection. Corrected On-Site. New Violation. 17B, Violation of Code: [.06(5)(n) ] Dumpster with lids open and with one lid missing from dumpster. Dumpster lids should be closed at all times and be kept in good repair. New Violation. 8-2B, Violation of Code: [.07(6)(g) ] Bleach sanitizer bucket with concentration of greater than 200 ppm. Bleach sanitizer should be mixed at 50-100 ppm.
