Violations: 4-2B, Violation of Code: [.05(6)(n) ] The mechanical dish machine was found to not be producing sanitizer at the time of inspection. It was discovered that the container of chlorine sanitizer was empty yet dishes were being washed at the time of inspection. The person in charge changed the sanitizer and rewashed the dishes that were in the ware washing area. The dish machine was then producing chlorine sanitizer at 50-100ppm. Corrected On-Site. New Violation. 6-1C, Violation of Code: [.04(6)(d) ] Potentially hazardous foods prepared from products at ambient temperature (i.e. canned products) not cooled to 41oF within 4 hours. Several large containers of pizza sauce mixed and cooling since the previous night were found in the walk in cooler at a temperature of above 41 degrees. The person in charge discarded the pizza sauce and was advised on proper cooling parameters. Corrected On-Site. New Violation. 11A, Violation of Code: [.04(6)(e) ] Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). Several large covered containers of pizza sauce did not meet proper cooling parameters and were discarded. The person in charge was advised on proper cooling methods such as using smaller containers without lids while actively cooling, ice baths, and ice wands to aid the cooling process. Corrected On-Site. Repeat Violation.

Violations: 2-1C, Violation of Code: [.04(4)(a) ] Bare hand contact with ready-to-eat foods - employee chopping tomatoes with bare hands. Advised PIC that a barrier such as gloves shall be between hands and ready-to-eat foods. Tomatoes discarded. Corrected On-Site. New Violation. 4-2B, Violation of Code: [.05(8)(a) ] Oberserved employee not sanitizing dishes - no sanitizer being used in the compartment sink. Advised PIC to use sanitizer such as chlorine or quat to sanitize dishes. Bleach was added to water at 50ppm for sanitization of dishes. Corrected On-Site. New Violation.
