• Observed chlorine sanitizer buckets not a minimum proper strength. C/A: The buckets were made at the proper minimum chlorine strength.
• Observed time/temperature control for safety foods (baked chicken) hot holding on a warmer reading below the minimum hot hold 135 degree Fahrenheit temp. C/A: Chicken was re-warm to 165 F.
• Observed several containers without labels after being taken out the original container. C/A: Containers were label.
• Observed failure to cool time/temperature control for safety foods (baked chicken, ground beef) with the proper methods. Food being cooled: Placing the food in shallow pans; Separating the food into smaller or thinner portions; Using rapid cooling equipment; Stirring the food in a container placed in an ice water bath; Using containers that facilitate heat transfer; Adding ice as an ingredient; or other effective methods. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: Arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. C/A: Food was put on ice to cool down before putting them in the reach in cooler.
• Observed fruit and vegetable sink being used for purposes other than washing fruits and vegetables (sanitizer buckets stored inside, utensils stored in there). C/A: Sink was cleaned and sanitized.
• Observed no ventilation hood system. Cooking time/temperature control for safety foods (chicken, fries, hamburger, etc.) that produce grease laden vapors. Must correct by March 19, 2018. Legal Notice issued.
• A follow-up inspection will be held March 19.
