• Observed no paper towels located at handwashing sinks. CA: Provide paper towels at all hand washing sinks or a hand drying device.
• Observed TCS food (rice, diced tomatoes, raw beef and turkey wings) cold held at greater than 41 degrees Fahrenheit in the walk in cooler unit. CA: Discard all food and get the walk in cooler unit fixed as soon as possible. Until it gets fixed use reach in cooler unit.
• Observed prepared food not marked with date of preparation or date for disposal. COS: All food was marked with the date it was made.
• Observed lack of use of chemical test kit when using chemical sanitizer at three-compartment sink/ sanitizer bucket. CA: Provide a chlorine test strip in order to check the proper sanitizer concentration level.
• Observed no air gap at the prep sink. CA: Provide a 3-inch air gap/indirect drain at the prep sink.
• A follow-up inspection will be held on May 25.
