• Observed several pans of lasagna prepped on 7/17/18 maintaining a temperature above 41F. (CA): All TCA food items must be cooled from 135 F to 70 F within 2 hours and 70 F to 41 F within 4 hours for a total cooling time of 6 hours.
• Observed mold on seal near dish machine and at hand sinks. (CA): Replace seals; all physical facilities must be maintained in clean and good repair.
