• Observed several red bell peppers with a mold-like growth within the walk in cooler located within the main kitchen. Food must be safe, unadulterated, and honestly presented and must be protected from cross contamination by storing damaged, spoiled, or recalled food being held in the food service establishment separate from other food.
• Observed many uncovered containers of food within many cold holding units throughout the main kitchen of the facility. Food must be covered and therefore protected from cross contamination while in storage. Facility Manager was advised to place a lid or food-grade covering on the uncovered containers of food.

• Observed failure of the mechanical warewashing machine to deliver an adequate concentration of sanitizer solution to clean food-contact surfaces and utensils. Chlorine sanitizing solution must meet a concentration of 50-100ppm. PIC advised to contact a technician to make the necessary repair to the mechanical warewashing machine.
• Observed containers of cooked chicken and sauces stored in direct contact with the floor within the walk in cooler located within the main kitchen. Food must be protected from contamination by storing the food in a clean, dry location; where it is not exposed to splash, dust, or other contamination; and at least 6 inches (15cm) above the floor.
• Observed heavily soiled wall beside the mechanical warewashing machine as well as heavily soiled wall and flooring underneath the mechanical warewashing machine located within the main kitchen of the facility. All physical facilities must be maintained in good repair and must be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Advised PIC to increase the cleaning frequency of the walls and floors within the warewashing area of the main kitchen.
• Observed heavily soiled ceiling, walls, and floors throughout the entire main kitchen of the facility. All physical facilities must be maintained in good repair and must be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Advised PIC to increase the cleaning frequency of the ceiling, walls, and floors within the main kitchen.
