• Observed improper vertical separation in main kitchen walk-in cooler; packaged raw turkey burger patties stored above packaged raw beef patties. Observed pan of raw fish stored above a pan of uncooked vegetables. CA: Food must be cooled in the correct descending order based on required final cook temperatures of the items. All violations were corrected onsite.
• Chlorine sanitizer not at proper minimum strength for mechanical warewashing. CA: Advised that maintenance be performed on machine and that three compartment sink but used exclusively.
• Observed cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours (cooked salmon - 61 degrees F). CA: Item was discarded and education was provided on how to rapidly cool food.
• A follow-up inspection will be held April 2.
