1 pound chicken livers, cleaned and trimmed

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Vegetable oil for frying

For the Onion Gravy-

2 tablespoons butter

1 large Vidalia onion, thinly sliced

2 tablespoons all-purpose flour

2 cups chicken broth

Salt and pepper to taste

Instructions-

Preparing the Chicken Livers

Soak the Livers: Place the cleaned chicken livers in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes. This step helps to tenderize the livers and reduce any gamey flavor.

Prepare the Breading: In a shallow dish, combine the flour, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the Livers: Remove the livers from the buttermilk, allowing excess to drip off. Dredge each liver in the seasoned flour mixture, ensuring they are well-coated.

Fry the Livers: Heat about half an inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the livers in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Making the Gravy

Sauté the Onions: In a separate pan, melt the butter over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.

Create the Roux: Sprinkle the flour over the onions and stir to combine. Cook for 1-2 minutes, allowing the flour to lightly brown.

Add the Broth: Gradually whisk in the chicken broth, ensuring there are no lumps. Bring the mixture to a simmer and cook until the gravy thickens, about 5 minutes. Season with salt and pepper to taste.

Serving-

Arrange the fried chicken livers on a serving platter and generously spoon the onion gravy over the top. Homemade biscuits add to this feast
