Ingredients:
4 boneless, skinless chicken breasts
Salt and freshly ground black pepper
1/2 cup all-purpose flour (for dredging)
4 tablespoons olive oil
4 tablespoons unsalted butter
8 ounces cremini or button mushrooms, sliced
3/4 cup dry Marsala wine
3/4 cup chicken broth
2 tablespoons heavy cream
2 tablespoons chopped fresh parsley
Instructions:
Prepare the chicken:
Pound the chicken breasts between two sheets of plastic wrap until about 1/2 inch thick.
Season both sides with salt and pepper.
Lightly dredge each breast in flour, shaking off the excess.
Brown the chicken:
In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
Add chicken and cook for 4–5 minutes per side, until golden brown and cooked through.
Remove the chicken and set aside on a plate.
Cook the mushrooms:
Add the remaining olive oil to the skillet if needed.
Add the mushrooms and sauté until they're golden and their moisture has evaporated, about 5–7 minutes.
Deglaze and make the sauce:
Pour in the Marsala wine and scrape the brown bits from the bottom of the pan.
Simmer for 2–3 minutes.
Add the chicken broth and heavy cream . Bring to a simmer and cook until slightly thickened, about 5 minutes.
Finish:
Return the chicken to the pan and cook for another 5 minutes, spooning sauce over the top.
Taste and adjust seasoning with salt and pepper.
Serve:
Sprinkle with fresh parsley.
Serve hot over pasta with crusty Italian bread.

WINE:
Because the sauce is slightly sweet and earthy from the Marsala and mushrooms, you want a wine that balances richness without overwhelming the dish. Barbera is fruity, slightly acidic, and light enough to match the sauce without overshadowing the chicken.
