Ingredients:
1 lb ground beef (80/20 for good flavor)
½ lb ground pork
½ lb mild Italian sausage (removed from casing)
1 small Vidalia onion, finely chopped
1 small green bell pepper, finely chopped
2 cloves garlic, minced
2 eggs, beaten
1 cup whole milk
1½ cups crushed saltine crackers (or stale white bread, torn)
1 tbsp Worcestershire sauce
2 tbsp ketchup (plus more for glaze)
1 tbsp Dijon mustard
1 tsp dried thyme
1 tsp dried oregano
1 tsp smoked paprika
1 tsp sea salt
½ tsp black pepper
Pinch of cayenne (optional—but Mama would’ve said “just a whisper”)
Chopped parsley for garnish (optional)
For the Glaze:
½ cup ketchup
1 tbsp brown sugar
1 tsp apple cider vinegar
Dash of hot sauce for a little Southern sass
Instructions:
Preheat oven to 350°F. Grease a loaf pan or line a baking sheet with foil.
Sauté aromatics: In a skillet over medium heat, cook the onion and bell pepper in a little butter or oil until soft—about 5–7 minutes. Add garlic during the last minute. Let cool slightly.
Mix the meat: In a large bowl, combine the beef, pork, and sausage. Add sautéed veggies, eggs, milk, crackers, Worcestershire, ketchup, mustard, herbs, spices, salt, and pepper.
Shape and bake: Form into a loaf shape on your prepared sheet or press gently into a loaf pan. Smooth the top and brush with half the glaze.
Bake for 45 minutes, then brush with more glaze. Return to oven for another 15 minutes, or until internal temp hits 160°F and juices run clear.
Rest 10 minutes before slicing.
