February is the month we celebrate love, not just with a single day, but as a tribute to romance throughout. We indulge in the pleasures of red roses, French wine, and fine dining. One culinary delight that elevates any romantic meal is an exquisite Rack of Lamb. This traditional favorite, when paired with Saint-Amour, a Cru Beaujolais wine from France, turns a simple dinner into an extraordinary celebration of intimacy and devotion.

Ingredients:

1 rack of lamb (8 ribs, about 2 pounds)

2 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and freshly ground black pepper, to taste

1 cup breadcrumbs

1/4 cup Dijon mustard

1/4 cup softened butter

Instructions

Prepare the Lamb:

Preheat your oven to 450°F (230°C).

Trim any excess fat from the rack of lamb and season it generously with sea salt and fresh ground pepper.

Create Herb Mixture:

In a small bowl, combine the minced garlic, rosemary, thyme, olive oil, and a pinch of salt. Mix well to form a paste.

Coat the Lamb:

Rub the herb mixture evenly over the rack of lamb, ensuring all sides are coated.

Place the lamb, bone side down, on a roasting pan.

Crust Preparation:

In another bowl, mix the breadcrumbs with the softened butter until they resemble coarse crumbs.

Spread the Dijon mustard over the top of the lamb, then press the breadcrumb mixture onto the mustard to form a crust.

Roast the Lamb:

Roast the lamb in the preheated oven for about 15-20 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C).

Allow the lamb to rest for at least 5 minutes before slicing.

Serve:

Slice the rack of lamb between the bones into individual chops.

Serve with a glass of Saint-Amour Cru Beaujolais and roasted vegetables and a fresh green salad.
