For the strawberries:
1½ pounds ripe strawberries, hulled and sliced
⅓ to ½ cup granulated sugar (depending on the berries' sweetness)
1 teaspoon lemon juice (optional, for brightness)
For the shortcakes:
2 cups all-purpose flour
¼ cup granulated sugar
1 tablespoon baking powder
½ teaspoon fine sea salt
½ cup cold unsalted butter, cut into small cubes
⅔ cup heavy cream, plus extra for brushing
1 teaspoon pure vanilla extract
For the whipped cream:
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Directions
Prepare the strawberries:
In a medium bowl, toss the sliced strawberries with sugar (and lemon juice, if using). Let them rest for at least 30 minutes, stirring occasionally, until they become glossy and syrupy.
Make the shortcakes:
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter and use a pastry cutter or your fingertips to work it into the flour until the mixture resembles coarse crumbs.
Stir in the cream and vanilla gently until a soft dough forms — it should be shaggy, not overmixed.
Turn the dough out onto a lightly floured surface. Pat it into a ¾-inch thick rectangle and cut out rounds with a 2½-inch biscuit cutter.
Place the shortcakes on the prepared baking sheet. Brush the tops with a little heavy cream and sprinkle lightly with sugar.

Whip the cream:
