Ingredients:
1 cup dried garbanzo beans (or 2 cans of cooked garbanzo beans)

1 tablespoon olive oil
1 medium onion, diced
2 garlic cloves, minced
1 bell pepper, diced
1 carrot, diced
1 celery stalk, diced
1 teaspoon ground cumin
1 teaspoon smoked paprika
4 cups vegetable broth or chicken broth -
1 can (14 oz) diced tomatoes -
Salt and black pepper to taste
Fresh cilantro or parsley for garnish
A squeeze of lime
Instructions:
If using dried garbanzo beans, soak them overnight and cook them in boiling water for about an hour until tender. If using canned, simply rinse and drain.
In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, carrot, and celery, sautéing until softened, about 5-7 minutes.
Stir in cumin and smoked paprika, cooking for another minute until fragrant.
Add cooked garbanzo beans, broth, and diced tomatoes.
Bring to a boil, then reduce heat to simmer for 20-30 minutes to meld the flavors. Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro or parsley and a squeeze of lime for an extra kick.
