Buster Canale’s Fried Oyster Po' Boy

For the Oysters:
1 pint of fresh oysters, drained
1 cup of buttermilk
1 cup of cornmeal
1 cup of all-purpose flour
1 tablespoon of Tony Chachere’s Cajun seasoning
Vegetable oil for frying
For the Sandwich:
4 French bread rolls or hoagie rolls, split and toasted
1 cup of shredded lettuce
1 large tomato, sliced
1/2 cup of sliced Bread and Butter pickles
1/4 cup of mayonnaise
Hot sauce
Instructions
Prepare the Oysters: Place the oysters in a bowl and cover them with buttermilk. Let them soak for about 15 minutes.
Coat the Oysters: In a separate bowl, combine cornmeal, flour, and Cajun seasoning. Remove the oysters from the buttermilk and dredge them in the cornmeal mixture, ensuring they are well-coated.
Fry the Oysters: Heat about 2 inches of vegetable oil in a deep skillet over medium-high heat. Fry the oysters in batches for 2-3 minutes, or until golden brown. Drain on paper towels.
Assemble the Po' Boys: Spread mayonnaise on the toasted rolls. Layer with lettuce, tomato slices, pickles, and the fried oysters. Add a splash of hot sauce if desired. Serve immediately.

Ingredients:
For the Pudding:
6 cups of day-old bread, cubed (French bread works well)
2 cups of whole milk
1 cup of heavy cream
4 eggs
1 cup of granulated sugar
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
1/4 teaspoon of nutmeg
1/2 cup of raisins (optional)
1/2 cup of chopped pecans
For the Sauce:
1/2 cup of unsalted butter
1 cup of brown sugar
1/4 cup of heavy cream
2 tablespoons of bourbon or rum (optional)
Instructions:
Prepare the Bread Pudding: Preheat the oven to 350°F (175°C). In a large bowl, whisk together milk, cream, eggs, sugar, vanilla, cinnamon, and nutmeg. Stir in the bread cubes and let them soak while you prepare the sauce.
Make the Sauce: In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, heavy cream, and bourbon or rum. Bring to a simmer and cook for 2-3 minutes, until the sugar dissolves. Remove from heat.
Bake the Pudding: Pour the soaked bread mixture into a greased 9x13-inch baking dish. Sprinkle with raisins and pecans if using. Bake for 45-50 minutes, or until the pudding is set and lightly golden.
Serve: Drizzle the warm sauce over the bread pudding before serving. Enjoy warm with your favorite ice cream or whipped cream.
