• No Certified Food Safety Manager certificate in establishment. No CFSM present during inspection. Must have someone with food management responsibilities in establishment that is also a CFSM. This must be completed in 30 days.
• Raw meats stored above vegetables and sauces in reach-in coller. Cooler was rearranged on request so that food itmes were in proper storage order. Education provided during inspection on proper storage of foods.
• No hot water in kitchen. Hot water must be supplied for proper dish washing, hand washing, and cleaning. Technician arrived during inspection to check heater. Do not replace heater without first contacting this office.
• Remarks: Do not serve ceviche until the correct advisory statement is on the menu; hot water must be restored before opening tomorrow; there is excessive trash around the dumpsters in back of building. This is a public nuisance and must be cleaned.
