Restaurant Inspections: Black Mildew; Film Of Grease, Dirt In Kitchen

The Cherokee County Environmental Health Department conducted food service inspections July 19 through Aug. 2 at the following establishments:

• Person-in-charge (PIC) not ensuring that facility and equipment is being cleaned. Inspection was in response to several complaints about store's uncleanliness. PIC must establish routine cleaning in the facility and ensure that staff are performing cleaning duties.
• Knives stored in knife box had dried food residue on blades. Knives taken to dish area. Housing for blizzard machine has encrusted food product buildup. Equipment must be thoroughly cleaned routinely to prevent buildup.
• Unapproved flying insect spray was found in facility. Use only food-service approved sprays inside facility. Spray removed on request.
• Employee multivitamin stored on shelf in walk-in above food product. Store employee items separately. Vitamins relocated on request.
• Cups stored at blizzard station are unprotected from food product buildup and debris. Store cups in clean location.
• Cooler interiors at ice cream stations have thick accumulation of dried and liquid food products. Rack under warmer unit has encrusted buildup from food drippings; colorings and gels for cake products have thick and sticky buildup; shelving in cake prep area has black film of food product accumulation; black mildew observed around door gaskets of cooler reach-in units. Grease buildup observed on sides of fryer and grill areas. Coolers, shelving, and other food equipment must be thoroughly cleaned and routine cleaning procedures must be established.
• In many areas of kitchen there is a black film (walls, floors, cabinets at front counter, foot pedals at blizzard machine) of grease, food, and dirt caused by lack of cleaning. This must be addressed and a routine cleaning plan must be implemented. Damage to wall near mop sink must be repaired and holes in wall at drive thru window must be repaired.
