Grilled Nectarines w/Mascarpone
It's warming up, so we had to break out the grill — one of our favorite things to grill is fruit.

It’s warming up here in Chicagoland so I had to break out the grill. One of my favorite things to grill is fruit; pineapple, peaches, plums, bananas and my all time favorite nectarines.
Usually we grill whatever protein we’re cooking then while we’re eating dinner we throw the fruit on. It’s so easy and really provides a fresh and pretty light dessert.
If you have never used mascarpone cheese it's basically an Italian cream cheese and (when confectioners' sugar is added) is very good in sweet dishes. It can be found in the gourmet cheese section at most grocery stores.

Here’s what you’ll need:
- Fruit (whatever you want to grill)
- Mascarponee cheese
- A few tablespoons of confectioners’ sugar
- A few tablespoons of butter
- A few tablespoons of sugar

This couldn’t be easier. Cut the fruit into grillable pieces. In the case of the nectarines I halved them and took the pits out. Brush the fruit with a little butter and sprinkle with a some sugar. Grill over medium to high heat until the fruit softens and is a little charred.
Take some Mascarpone cheese (we used about 1/4 cup for the 4 nectarines) and wisk in confectioners’ sugar to taste.
Top the fruit with some mascarpone and enjoy!
