Elmhurst Brewery Set To Open In May
The city was an "easy choice" for the brewery's second location, its co-owner said.
ELMHURST, IL – A brewery is planning to open in May in the Spring Road business district.
Phase Three Brewing Co.'s brewery, taproom and restaurant are set for 494 S. Spring Road.
Phase Three's 120-seat concept includes the sale of handcrafted beers and hard seltzers for consumption both for on and off site.

"The City of Elmhurst was an easy choice for our seasoned business that currently operates a production and taproom space in Lake Zurich, Illinois, since 2019," co-owner Evan Morris said in a letter to the city.
Morris is requesting a liquor license for Phase Three's 3,500-square-foot location. The city's Public Safety Committee plans to review the request Monday.

Last summer, Phase Three had hoped to open in late 2022 or early 2023. But like many renovation projects, it appears to be taking longer than expected.
The company's owners are Morris and Shaun and Brittany Burns. They originally worked with one other at a restaurant and brewery in Schaumburg. Shaun and Brittany later got married.
Last year, Thrillist named Phase Three Brewing one of the 34 "hottest" breweries in the United States. It was one of three in Illinois.
A few doors down on Spring Road, Bottle Theory, a craft beer taproom, opened in November at 542 S. Spring Road.
