S'mores Cupcakes

Now that summer is upon us, bonfires will be taking a short hiatus. Here is a solution to bonfire-less s'mores. They're simple, fun and you will have no problem convincing people to come over and dive in with you.
Preheat oven to 400 degrees.

Cupcakes
1 cup Flour

3/4 cup Graham Cracker Crumbs
1 1/2 tsp Baking Powder
1/4 tsp Salt
1 stick Butter, room temperature
1 cup Sugar
2 Eggs
1/2 tsp Vanilla
1 tsp Milk
1 vanilla "snack pack" pudding*
Topping
3 cups Mini Marshmallows
1 cup Milk Chocolate Chips
1/4 cup Heavy Cream
Combine flour, graham cracker crumbs, baking powder, and salt. Slowly beat butter into mixture. Add sugar and mix well. Add the eggs, one at a time, mixing well after each. Lastly, add vanilla and milk. Lastly, stir in vanilla pudding snack pack. Do not fill cupcake pans to the top, it is important that the cupcakes, even when fully cooked, are not over flowing the cupcake papers. Mixture will be thicker than most cake batters. Bake for 15 mins or until toothpick comes out clean.
While cupcakes are baking, make the ganache. Add chocolate chips and heavy cream to a double boiler, stirring often, until completely melted. Let sit on low heat until ready for use.
As soon as the cupcakes come out of the oven, cover the tops of the cupcakes with mini marshmallows. Let sit for a few minutes, allowing the marshmallows to melt a bit.
Add ganache on the top of each cupcake.

*The snack pack is optional. Adding a cup of already made pudding to any cake mix will produce a more moist cake and also helps preserve cupcakes.
