New vegan and gluten-free bakery coming to Owings Mills
Founder, who started selling products at local Farmer's Markets, ready for full-time operation

Tavia Mick has only been involved with the baking industry for about three years and she has no formal educational training on the art of creating irresistible cookies, cakes and pies. In her mind, she has two things to overcome this lack of experience, and intends to open “A Bite of Heaven,” a new bakery specializing in vegan and gluten-free dessert specialties at Brookside Commons this spring. The mixed-use project, developed and managed by David S. Brown Enterprises, Ltd., is located in the Owings Mills section of Baltimore County.
“I have been selling my baked good products at Farmer’s Market for several years and the response I always receive is that I should open a shop where people can purchase my products on a daily basis,” explained Mick, who works as an information technology specialist for the United States Government by day. “But, more important than that, I get my daily inspiration from my best friend who passed away. Her encouragement and insistence that I open my own bake shop is why I eventually moved forward. And, the name of the store stands as a tribute to her.”
Although “A Bite of Heaven” will specialize in vegan and gluten-free products, it will carry a full spectrum of dessert items including sheet cakes, cookies, cupcakes, assorted pastries, muffins, brownies and specialty items such as wedding cakes. The bakery will feature a nut-free kitchen and a Kid’s Corner where young people will able to experiment in baking and be creative.

“An increasing number of consumers deal with food allergies and struggle to find items that they can both digest and enjoy,” Mick added. “We intend to separate our bakery from others and serve both a niche audience for these specialty desserts, as well as the general population in search of amazing cakes, cookies and pies.”
The store hours will be Monday through Friday from 6 am to 6 pm; and Saturday and Sunday from 6 am to 8 pm. Customers can eat baked goods within the store at the standing tables.

Brookside Commons is a three-building mixed-use business community comprised of mid-rise office and retail buildings on Lakeside Boulevard and Common Brook Road. The project is positioned within the planned unit development of Owings Mills New Town and is approximately three miles from Owings Mills Boulevard and Interstate 795.
