Learn to Cook, Wood Smoked Barbecue

Real barbecue is wood-smoked: we're not talking burgers and dogs here. We'll learn the right cuts of meat, sauces, and seasonings to prepare world-class, fall-off-the-bone barbecue. We'll sample Memphis Style Spareribs, Carolina Style Pulled Pork, and Texas Beef Brisket. Learn about the preparation of these meats and some of the many Southern side dishes that complement them. This class will be  lecture and demo. David Schaefer will teach the essentials for making the real thing. Handouts will be provided, bring a few containers for leftovers; a $12.50 food fee is payable to the instructor at the first class to cover the cost of this satisfying, authentic feast. David Schaefer is the owner of Stump Jumper BBQ Catering and a chef at Blue Ribbon Bar-B-Q in Arlington. He is a five time state champion on the professional BBQ Competition Circuit in several states. David is also a Kansas City Barbecue Society Certified BBQ judge and contest representative.
