Sauce at Andolini's the Place for Burgers, Wings, Ribs and Fries

Opened just a couple of months, Sauce will add delivery to their menu.

A true football fan, Spiro Pappadopoulos, of the family-owned was inspired to open a burger and wings place in Andover after hosting a Super Bowl party last winter.

“A friend of mine from Boston wanted wings, and I told him there wasn’t anywhere in Andover to get them,” he explained.

So on June 8, Pappadopoulos opened in the space adjacent to Andolini’s, an Italian restaurant. The family owns the building, and they previously operated a breakfast café there for three and a half years, he explained.

“I’ve always wanted to open a burger place, and with the addition of wings and ribs, it all come together,” he said, adding that their limited menu can be executed in the small space.

Pappadopoulos, along with manager Scott Guerin are thrilled with the reception, but admitted they have sometimes been caught off-guard by the popularity.

Open at 11am, he said that they see three meal periods; 12-1 lunch, after-school, 2:45-3:45 for the middle and high school students, and then dinner from 5-10pm. 

Pappadopoulos said he is lucky to be close to downtown, and across the driveway from the library. Native to the town and now living here, he said, “Andover has a nice downtown, and there is a lot of foot traffic.”

Sauce offers a variety of burgers with the Three B Burger being the most popular, with bacon, buffalo and homemade boursin cheese, he explained. The hand-cut fries are also extremely poplular.

Eight different sauces listed on the menu range from mild to very hot, but sometimes they will have special sauces, in response to customer requests.

Pappadopoulos explained that the wings and crispy ribs are first prepared in the oven before deep-fried. He cited the advantage of having the use of Andolini’s kitchen and staff for prepping.

Beer, he explained goes well with the menu, and Sauces offers a craft beer selection in cans. For the younger crowd, they have an equally impressive soft drink selection. 

Most items are under $7 and sometimes there are specials like a burger and a beer for $10, he said.

He explained that the business is 50/50 when it comes to take out versus sit-down. He explained there is a large demand for catering birthday parties and other events. Fridays are busiest for sit-down.

In addition to take out, Pappadopoulos is excited to announce that Sauce will begin offering delivery service this weekend.

Sauce's mission statement, “To provide Andover with crispy wings, ‘fall of the bone’ ribs and addictive burgers all to be washed down with a great selection of craft beer,” sums it all up, he said.
