Healing Place's Oatmeal and Chocolate Chip Cookies - Recipe

This is my son’s, Brian Lui’s favorite cookie. I make them big, 3” in width (9 round cookie dough on a cookie sheet.) You can make smaller cookies (12 round cookie dough on a cookie sheet.) These are very hardy cookies that are not only good for dessert but they also make a nice breakfast cookie if you make a couple substitutions.

Variation Note - You can also add 1 C chopped walnut or chopped almonds. You can substitute dried cranberries or dried blueberries for the raisins. If you desire you can omit the chocolate chips, but everyone in my household won’t allow that to happen. The cinnamon adds a nice flavor to the cookies. This is a lightly sweetened cookie, if you want a sweeter cookie, hard packed the sugar into the measuring cup instead medium packed.

Steps to make –
• Cream sugar and butter
• Mix flour ingredients
• Mix oatmeal and chocolate chips
• Mix all ingredients together
• Bake
• Eat

Prep Time: 30 minutes
Cooking Time: 12-16 minutes
Serves: Makes about 18, 3” cookies

Ingredients
2 sticks butter, (room temperature)
1 ½ C medium packed, light brown sugar
1 ½ C flour, all purpose or gluten-free
1 t baking soda
1 t of salt
1 ½ t ground cinnamon
2 eggs, at room temperature
1 t vanilla
3 C quick or old-fashioned oatmeal
1 C raisins
12 oz bag semi sweet or dark chocolate chips

Directions
In a large mixing bowl, beat together butter and sugar until creamy using a heavy duty mixer until light and fluffy (about 5 minutes.) While it is mixing, mix the dry ingredients

In another large bowl, combine the flour, baking soda, salt, and cinnamon. Set aside.

In a third bowl, combine the oatmeal, raisins and chocolate chips. Set aside.

To the butter and sugar mixture, add the eggs and vanilla and beat well. Slowly add the flour mixture and the oatmeal mixture, and mix until combined (about 5 minutes.)

Drop dough by rounded tablespoons onto an ungreased cookie sheet. For small cookies bake 10-12 minutes. For large cookies bake 12-16 minutes, or until golden brown. Your baked cookies will be puffed when they come out of the oven but will harden and flatten out as they cool. These cookies are so good with milk. Cool 10 minutes on the cookie sheet before removing to a cooling rack.
