Recipe - For a quick snack or to accompany a meal, I like to roast sweet potatoes or yams by thinly slicing two large, peeled, sweet potato and coating with three tablespoons of olive oil. Season with salt and pepper. On a large baking sheet, line potatoes in a single layer and roast on 400 degrees oven for 10 minutes and flip and roast for another 10 minute
