Roche Bros. Chef Brian Dunn Brings Home Honorary Plate from FMI Supermarket Chef Showdown
Featured Recipe Inspired Ethnic Noodle Bowls Now Available in All Roche Bros. Supermarkets
The Food Marketing Institute (FMI) Supermarket Chef Showdown took place recently in Chicago. Fifteen top grocery store chefs from around the country competed in a cook-off in front of a live audience on the exhibit floor during the annual FMI Connect conference.
Among the finalists, for the 3rd year in a row, was Culinary Innovation Chef Brian Dunn from locally based Roche Bros. As a competitor in the Ethnic Food Category, Dunn presented his Shichimi Togarashi Shrimp Noodle Bowl. Shichimi Togarashi is a Japanese blend of spices featuring chilies, orange peel, sesame seeds, ginger, and seaweed.
Chef Dunn’s recipe was chosen out of over 300 submissions.

“The competition was stronger than ever this year, but I really enjoy the camaraderie with my fellow chefs from other regions,” said Dunn. “I love to experiment with flavors and textures so this competition is always a great opportunity for me to showcase the latest culinary creations we are bringing to our customers in-store. There is more and more interest in eating ethnic foods, so that’s why we offer an ethnic inspired line of prepared ‘bowls’ featuring Indian, Asian and Italian dishes.”
Dunn returned to Boston with his third honorary FMI Supermarket Chef Showdown plate and a giant personalized Hershey bar, along with anticipation for next year’s competition.
