Plymouth-Canton Educational Park Culinary Teacher Diana Woodward isn’t afraid of a challenge. She has proven that point over the years turning P-CEP into a state championship culinary power. But over the past few weeks, Woodward has put her creativity to the test as the quarantine forced her to teach her classes online from her home kitchen. She is now using video lessons to teach both her Restaurant Operations and Hospitality/Culinary Exploration Classes.

Woodward is hosting a weekly conference call to check on students and taking requests for things students missed out on because of the shortened school year. She takes those requests and crafts a new unit around it, incorporating the skills students would have learned had they been in the classroom. The chef also links in state standards and activity resources that are provided by Prostart, the National Restaurant Association’s formalized curriculum.

Woodward then films her lessons in steps so they become a collection of five to six minute videos with all the fundamentals demonstrated. She then posts her lessons in Google Classroom as a formal unit. Students take notes in Google Classroom, and often leave comments. Finally, students have a choice of making part or all of the dish at home and posting a photograph. They also can provide an alternate online learning activity based on the program textbook. Some of the dishes being taught are cheesecake, yeast bread, chicken parmesan and homemade pasta.
