
Lobster Fest is Back!
Did you know lobster is a lean source of protein and lower in fat, calories and cholesterol than a skinless chicken breast? Lobster is also an excellent source of vitamins and minerals that promote increased brain activity, healthy bones and nerve cells. Most importantly, lobster is absolutely delicious, simple to prepare and on sale now during Busch’s annual Lobster Fest!
We asked our Chef Rebecca Wauldron to tell us why she is excited about lobster season. Chef Rebecca says both nutrition and flavor are important factors when preparing any meal. She loves Maine lobster not only for the valuable nutrients it provides, but also because there’s a variety of straightforward ways in which to cook it. Here are Chef Rebecca's cooking suggestions to ensure your sweet, juicy, rich Maine lobster is prepared to perfection:

- Boil – Season a large pot of water with sea salt. Use three quarts of water for every two pounds of lobster. Add lobsters and keep pot uncovered. Cook for eight minutes per pound of lobster; stir lobsters half way through cooking. Let lobsters rest for five minutes after cooking. With this method, lobsters cook faster and the meat comes out of the shell more easily.
- Steam – Pour two inches of water into a large pot and bring to a boil. Place lobsters in the pot and cover tightly. Steam ten minutes per one pound of lobster in the pot. This cooking technique yields a more flavorful, tender meat and helps to ensure the meat doesn’t overcook.
- Parboil or blanch – Prepare lobster this way if you plan to remove the meat for other dishes that require further cooking. Use the same directions for boiling, but only boil for two minutes, then remove from heat while lobsters are still warm.
- Grill – Parboil lobsters for five minutes, then split them down the middle underside with a knife. Remove the sand sac near the head, the black vein in the tail and the green tomalley. Baste the meat with oil or butter and grill over medium heat for five to six minutes; turn, baste and grill for another four to five minutes.
