My favorite Gluten-Free recipe!

This is by far my most requested Gluten Free recipe. Feel free to steal it and make it your own!

For those of you who don't know me yet...my name is Nicole McLaren. I was diagnosed with Celiac Disease almost 2 years ago. Since my diagnosis, I have looked for recipes that I could make for my family that would be healthy and inexpensive – as almost everything pre-packaged as Gluten Free (GF) is pricey!  Here is my favorite receipe to share with family and friends. They will never even guess how good it is for them!

Roasted Chicken and Veggies:

  1. 1 whole chicken
  2. Assortment of veggies (we prefer Carrots, Broccoli, Potatoes, Sweet Potatoes, Peppers, or Celery).
  3. 2 TBSP Olive Oil
  4. 2 TSP Salt
  5. 1 TBSP Garlic Pepper
  6. 1 TSP Black Pepper

Peel, and cut the veggies however you want to.  (We simply peel the carrots and use them for stuffing the chicken). You can cut the potatoes into small cubes, slices or strips.

Mix the spices together and set aside for a moment.

Preheat the oven to 300 degrees.

Place the chicken into a roasting pan and drizzle the Olive Oil over both sides of the bird.  Then, sprinkle the spices over the olive oil.  Reserve a small amount of the seasonings for the veggies.

Stuff the cavity of the chicken with carrot sticks or pieces of celery.  This will help to flavor all of the meat from the inside out.  Place the rest of the veggies around the chicken. You can pack as many veggies into the pan as possible, as they will shrink when they cook. Sprinkle the rest of the seasonings on top of the veggies.

Cover the veggies only with aluminum foil.  This will prevent them from burning.  Bake for 3-3 1/2 hours.  Check the temperature in the thickest part of the meat to make sure it is a minimum of 165 degrees prior to eating.

Serves 4-6 people

This dish can be served with mashed potatoes or rice.  I suggest if you are making rice to remove some of the chicken drippings/broth from the roasting pan with a baster.  Collect enough of the liquid to add to your rice.  This will naturally add flavor to the rice without additional condiments.
