Portable Pasta for Hoboken

After a sneak preview event during the July 4th weekend, Vito's Lotsa Pasta truck officially opened for business on July 19, 2010. Owned and operated by Vito Gigante and Nicky Burke, Vito's is the latest in a series of food trucks that have been popping up in the Hoboken area. 

I arrived to check out the scene and the food at lunchtime on a rainy day a few days after the official launch.  Despite the rain, a handful of folks crowded around the truck under umbrellas perusing the menu. 

After discussing my options with the counter person, I decided to try the Penne with Grilled Chicken and Vodka Sauce ($7.95) and the Rigatoni with Meat Sauce (7.95). 

All orders at Vito's are made fresh while you wait or you can call in advance and have it ready for you when you arrive. 

While I was waiting, I asked Chef Chris how opening week was going.

"We have had a very successful beginning, it's been a great week so far," he said. "We just hope it gets better as we go." 

The chef called his food "some of the best on wheels."

After trying the food for myself, I would go further and say it's some of the best in the area - period - on wheels or not.  The portions are huge and the flavor is just as big.

I started with the Penne with Grilled Chicken and Vodka Sauce. The vodka sauce was creamy with tangy pieces of crushed tomato peppered throughout.  The chicken was tender as was the penne.

The Rigatoni with Meat Sauce was equally as delicious with a hint of saltiness to the beef combined with a sweet and succulent tomato sauce.

Both dishes were served with fresh, crusty Italian bread - perfect for sopping up any excess sauce.
