New Restaurant In Hudson County Grows Its Own Veggies On The Roof

Acclaimed chef Dan Latham's new venture The Table, steps from the Hudson-Bergen Light Rail, uses home-grown veggies in dishes and cocktails.

HUDSON COUNTY, NJ — When Culinary Institute of America-trained chef Dan Latham announced in March 2023 that he would close Latham House in downtown Jersey City — famous for its Moroccan lamb meatballs and other unique dishes — he had good news for foodies. Now he's growing squash, kale, and cilantro on the roof of a new luxury residential complex, with panoramic views of the New York skyline and a location across the street from the Hudson-Bergen Light Rail train.

With a menu that's updated every two weeks, Latham, a Jersey City resident, is at the helm of The Table, located on the ground floor of the 3 Acres Development on Jersey City's western edge. New restaurants and residential developments are on the rise in that neighborhood, which, because it's three miles from the Hudson River, offers more reasonable rents than the waterfront developments downtown.

On a recent Friday night, patrons were heading to The Table's bar and tables before 5 p.m., taking advantage of dishes like salmon with vegetable risotto, squash pizza, and truffle mac and cheese.


They were also enjoying refreshing cocktails at the bar, made with the fresh ingredients. (The bar at 3 Acres has a treat for people who live in the complex — a separate, private bar area just for them, where a woman and her child were dining when we stopped by.)

The restaurant opened last July, and this will be the first summer in which more than a dozen vegetables will be used from the rooftop — in fact, up to 15 ingredients are growing there, the restaurant said.

Seasonal dishes and cocktails using ingredients from the garden include:

  • Lemon Squash Pizza crafted with habanero chili, pepita pumpkin seeds, mozzarella, parmesan, and basil
  • Crispy Broccoli and Zucchini Pakora served with salsa verde and cucumber yogurt sauce
  • Grilled Salmon and Vegetable Risotto made with Italian arborio rice and featuring seasonal vegetables from our garden

  • Pica Pica, for mezcal lovers, crafted with rosemary, Himalayan pink salt, and jalapeño

For those unfamiliar with the western edge neighborhood, it's accessible via the West Side Light Rail stop, which is just across the street from 3 Acres:


Those coming from Hoboken and North Hudson can change trains at Newport, Liberty State Park, or any stop in between, taking the light rail past St. Peter's University to the West Side station.

Three Acres itself is worth visiting, a 629-unit complex that includes amenities such as a pool, video games, and bowling, as well as specific events for residents, such as tastings, puppy parties, and painting sessions with artists who live there.
