A Recipe for Spiced Chick Peas and Potatoes
A great side dish or a main dish if you're a vegetarian.

Chick peas can be bought dried in a bag or pre-cooked in a can. You can find them in any supermarket. They are delicious eaten cold in salads, cooked in stews, ground into flour, crushed and shaped into balls, then fried to make falafel or ground into a paste to make hummus.
They contain zinc, folate, protein, are low in fat and high in dietary fiber. Here's a great side dish or a main one if you're a vegetarian:

Ingredients
- 1 onion-chopped
- olive oil
- 9 medium size white potatoes-peeled and cut into chunks
- 2 garlic cloves-crushed
- 1/4 cup fresh chopped parsley
- 1/4 cup water
- salt and pepper to taste
- 1--15 oz can chick peas (with liquid)
- 1 tablespoon ground coriander
- 1 teaspoon ground cumin

1. Use a large frying pan and cover bottom with oil
2. Saute onion for 5 minutes
3. Add garlic and potatoes
4. Cook for 15 minutes on low/medium heat
5. Put in parsley, water, chick peas and 4 seasonings
6. Continue to cook until potatoes are soft-about 20 more minutes
7. Enjoy when done
This satisfying dish will be enjoyable for your whole family. The aroma is inticing and you can eat this dish for dinner as a main course or pair it with a chicken or fish dish for a nice meal. Chick peas are a favorite vegetable in my house and you will love this dish. They are also a great snack straight out of the can. My kids love them and they are much healthier than cookies for a treat. Enjoy this dish!
