Give Peas A Chance!
March is pea season. Time to plant peas in your garden and time to make a delicious springtime soup that everyone will love.
Chidren and teachers at the Mount Kisco Childcare Center have been growing, cooking and eating health supportive food that is fun to prepare and delicious for over 10 years now. We have seen time and time again that when children grow food, they love to eat it.
March is an especially fun month because we focus on green foods. During Mount Kisco's St. Patrick's Day Parade last week, marchers from the center handed out packets of peas for planting. Peas are easy to grow, seeds can be planted in mid-March. For more directions on how to sow seeds, visit MKCCC's Facebook page.
In addition to planting peas outside in garden beds at the center, children prepared a delicious pea soup utilizing frozen peas.

Spring Pea Soup

Ingredients:
1/2 bag of frozen organic peas
1/2 pound of washed fresh organic baby spinach
1 1/2 cup vegetable stock
1 tablespoon olive oil
Juice of 1/2 lemon
Small handful of fresh mint sprigs
1 cup organic plain yogurt
Salt & pepper
Directions:
Remove any thick spinach stems, gently tear spinach into smaller pieces
Warm olive oil in electric frying pan
Add prepared spinach, stir and cook until just wilted.
Add vegetable stock and frozen peas, warm all of the ingredients.
Place into food processor or blender and mix until smooth and uniform
Add a squeeze of lemon juice along with salt and pepper to taste.
Tear mint leaves from stems and tear them into smaller pieces.
Mix into yogurt.
Serve warm soup with a dollop of mint yogurt on top.
