
Considering the proximity of my apartment to , it is somewhat tragic that I don’t make it there more often.
There are few things as comforting or satisfying as things wrapped in flakey, buttery piecrust. For me, this is all the more true when the filling of said piecrust is my favorite combination of ingredients: refried bean, cheese and jalepenos, a la the “Tex-Mex” pie at DUB Pies.
Rest assured, this is not a delicate meal. It is hearty, and comforting – a hefty helping of refried pinto beans, speckled with crumbled queso fresco and pickled jalapeños come wrapped inside the Australian bakeshop’s signature flakey crust.

It all comes together to form the perfect busy-day lunch – filling, satisfying and quick.
I think of it sort of like a grown-up Hot Pocket – tasty ingredients encased in pastry that makes it easy to eat with one hand while you do five million things with your other, but without all the preservatives and questionable meats and cheeses.
