With only delicate seasonings the soup really lets the peas shine through.

Our first find is the Sweet Pea and Leek Soup at in Crown Heights.
It is not too thick, with a creamy base that still has some texture. But the best thing about it is that it’s not overly seasoned – it tastes like peas.

Owner and chef Abigail Hitchcock said she introduced the soup to the menu in early April to celebrate spring. And she kept the seasoning to the minimum to let the vegetables shine though
“It’s maintaining the beautiful sweetness from the pea and of course the leeks – leeks are very springy to me,” she said.

And with peas finally in season, the soup is the perfect way to celebrate the plethora of produce now available at the farmer’s market.
