Video: Chef Demonstrates How to Make Fresh Mozzarella
Chef Rich Kanowsky stopped by the West Islip Library to give a tutorial on the process of turning curd and water into mozzarella.
All that was missing was a well done crust, tomatoes and basil.
Then, the fresh mozzarella prepared at the West Islip Public Library on Tuesday evening would've made for a perfect Margherita pizza.
Richard Kanowsky, who's the Executive Sous Chef at the Hearst Corporation building in Manhattan, provided a demonstration on how to make the favorite Italian delicacy.

Equipment:
- 6-8 Qt stainless steel pot
- 1 slotted spoon
- 1 colander
- 1 sharp knife
- Large mixing bowl
- Thermometer

- Pot of water heated to 175 degrees and heavily salted (should taste like the ocean)
- Curd (you can make your own or buy from a store that sells fresh mozzarella)
