According to the company, the group is prepared to launch a minimum of three additional dining concepts in 2026. Further projects are also under development for 2027. Pollock serves as an owner of the group and is also the founder and CEO of Legacy Realty, a commercial real estate firm established in 2024.
Pollock previously partnered with Mike Hanley and Jerry DiLembo through Surefire Hospitality to launch the Burgatory and Shorty’s brands. In 2024, Pollock acquired full ownership of Shorty’s, which now falls under the oversight of the new hospitality group.
