Young, a Maine native, specializes in a vast array of French and American specialty hearth breads, pastries, and savory cuisine.

He attended Southern New Hampshire University and studied Culinary Arts at The Culinary Institute of America, according to the bakery's website.

Young bakes classic French pastries from scratch, his specialty the Kouign Amann, essentially a caramelized croissant, is a fan favorite. He also makes all sorts of breads, sandwiches, and other items.

Young said, though, that over the past year, he received "a lot of valuable suggestions" to better serve his customers.

So Young closed to make renovations, adding a new chilled pastry case.

A new menu also boasts wheat-free options and Home Maine ice cream. There's also online ordering for pastry pick-ups, catering trays, new Meadowlark-tiered naked cakes, and more.

The bakery is open from Tuesday to Saturday from 7 a.m. to 8 p.m. and from 7 a.m. to 3 p.m. on Sunday.

Its menu of breakfast, lunch, and dinner has also expanded to include smash burgers, jumbo chili/sauerkraut hot dogs, ice cream all day, chicken cutlet sandwiches, pastries, baked goods, and coffee drinks.
