Young said his inspiration for the burgers and hot dogs came from a business in Maine where he grew up.
"Before Five Guys, before Shake Shack, I had Bolley's," he said. "This place is an institution here in Waterville, Maine, and with our dinner menu coming up, I am pulling a lot of inspiration from this landmark. A killer hotdog and smash burger will be a staple on our new menu and will be the next story in the chapters of Meadowlark Bakery & Café. I can't wait to put our spin on an American staple."
Young, a Maine native, specializes in a vast array of French and American specialty hearth breads, pastries, and savory cuisine.
He attended Southern New Hampshire University and studied Culinary Arts at The Culinary Institute of America, according to the bakery's website.
Young bakes classic French pastries from scratch, his specialty the Kouign Amann, essentially a caramelized croissant, is a fan favorite. He also makes all sorts of breads, sandwiches, and other items.
Young said, though, that over the past year, he received "a lot of valuable suggestions" to better serve his customers.
So Young closed to make renovations, adding a new chilled pastry case.
A new menu also boasts wheat-free options and Home Maine ice cream. There's also online ordering for pastry pick-ups, catering trays, new Meadowlark-tiered naked cakes, and more.
"We’re so excited for this next chapter of our journey and thank you for your patience as we get prepared for our biggest menu expansion yet," Young said. "With all sincerity, we wanted to express how much my staff and I appreciate your patience and are looking forward to seeing you all."
