Miz Fibz Challenges Eateries to Recycle

Take the Miz Fibz challenge. 

Scott Olsen and Vickie Lacks operate the popular deli and café on Kent Street in Barrington. And they recycle every bottle and bag and can and piece of paper or cardboard that makes its way thought the restaurant.

“We don’t have to recycle as a restaurant,” said Olsen. “But we’ve been doing it as long as we’ve had the restaurant, for about eight years."

The couple would like all Barrington restaurants to be as conscientious about and dedicated to recycling as they are. That’s the challenge. 

“We’re not fanatics,” said Lacks. “But we do what we can. We’re very conscious of the environment.” 

They also help to save Barrington some money by sending a lot less to the landfill in Johnston then they would if they didn’t recycle.

“That’s a fringe benefit,” said Olsen. “The town actually makes some money.”

Olsen and Lacks save themselves some money as well. The three 40-gallon barrels of recycling materials he takes to the Barrington recycling center with his pickup truck each week don’t end up in their dumpster.

“I think our dumpster fees are cut in half, at least,” Olsen said.

Olsen and Lacks actually take their newspapers to the Warren Animal Hospital, where they are used to line cages.

“Every restaurant really should be doing what we’re doing,” he said.
