When I Cook, Sandwich Night at the Elks is Anything But Ordinary
My recipes for pulled pork, BBQ chicken, chicken salad and home made salad dressing. Mmm...
Thursday night is sandwich night at the Bristol Elks. The goal is to have rotating volunteer teams with a specialty sandwich, plus the normal Thursday night menu. And any selection is five bucks or less. Good, cheap food brings in a crowd and the more succesful the lodge, the more good work the Elks can do in the community.
It was my turn to cook last night, so my specialty sandwich was pulled pork with homemade slaw, chicken salad, beany weenies, BBQ chicken, and spinach salad topped with grilled chicken or chicken salad. The only thing I left on the original menu was the burgers. When you ask Dad to cook, he kind of takes over, right down to the home made salad dressing.
The pulled pork with homemade BBQ sauce was a smash. The two people who tried the beany weenie dogs liked them, but my wife was right, (there, it's in print, online for all the world to see), they were not very popular. We did sell quite a few spinach salads after the first one went out and people saw how good they were, and chicken salad is always pretty popular especially mine, which is home made with grilled chicken.

The Elks is a membership organization open to all US Citizens. Members are welcome to bring guests and if anybody is interested in becoming an Elk, please contact me, dad@whatsdadcooking.com. The Elks do far too much community service to list in detail, but let me just point out their dedication to US veterans and youth groups, and scholarships for students. I have only been a member for a short time, and it is truly amazing how much they are doing. If you love a good cause (like myself), think abot the Elks.
