Health Inspections: Leo's, Goglia, Silver Creek

The Health Department reportedly found food service violations at three Bristol businesses in May.


Editor's Note: The following statements are from health inspection reports by the Rhode Island Department of Health, submitted in May.

Leo's Ristorante, 365 Hope St., Bristol — The Health Department noted 10 violations during an inspection May 7.

  • The consumer advisory provided does not disclose the foods on the menu that are raw or undercooked. Asterisks need to be added to the food items affected by the advisory.
  • Proper cooling methods were not used for potentially hazardous foods. Containers of sauce were observed in the refrigerator in containers greater than 4 inches deep and with a 160 degree temp. Sauce was removed from the walk-in, and placed in stainless steel container. Containers were placed in ice baths and ice wands were added. Temp of sauce had dropped to 94 degrees in 45 minutes. Sauce will continue to be monitored for proper cooling. Cooling sheet and logs were given and will be required be done for any cooled foods, these logs must be made available at next inspection.
  • Working containers of dry ingredients are not labeled with the common name of the food. Working containers holding food or food ingredients that are removed from their original packages, such as flour, herbs, salt, sugar and spices must be labeled with the common name of the food.
  • Utensils (spoons) in the (kitchen ) are displayed with the lip surface up. Utensils are to be stored so that only the handles are touched by employees and consumers if consumer self-service is provided.
  • Single service spoons were displayed with the lip contact surfaces up.
  • The food storage container used for bread crumbs is in poor repair. Container must be replaced. Container was disposed of during inspection and bread crumbs moved to another container.
  • Salad unit in the front service area had an ambient temp of 45 degrees F. Temperature was adjusted and reached 40 degrees by end of inspection. Manager will monitor unit.
  • Beverage tubing was observed in contact with ice used for drinks in the service area. Beverage tubing and cold plate beverage cooling devices must not be installed in contact with stored ice.
  • The facility is lacking test strips to measure the concentration of the quaternary ammonium sanitizing solution for the sanitizer bottles and 3-bay.
  • There are missing tiles on the floor near the ice machine, exposing wood. Wood is not easily cleanable and is absorbent. The materials for indoor floors must be durable, easily cleanable and nonabsorbent for areas suject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas and toilet rooms.

Goglia Market, 374 Wood St., Bristol — The Health Department noted two violations during an inspection May 7:

  • Several raw animal foods were stored above ready-to-eat foods in the walk-in refrigerator (such as pork and beef over lettuce and margarine). Raw animal foods must be separated from raw ready-to-eat food such as vegetables during storage.
  • Food items are stored next to soap on the shelves. Shelf was rearranged during inspection.

Silver Creek Manor, 7 Creek Lane, Bristol — The Health Department noted 5 violations during an inspection May 7.

  • Raw animal foods were not stored properly to prevent cross-contamination. A tray of raw chicken was stored over a tray of raw hamburger in the walk-in. Except when combined as ingredients, different types of raw animal foods must be separated from each other during storage by using separate equipment or arrranging each type of food in equipment so that cross contamination of one type with another is prevented.
  • The slicer had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch. Slicer was cleaned during inspection.
  • The nonfood-contact surfaces of the inside of the steam units in the downstairs dining area have an accumulation food residue and other debris. Steam units must be cleaned daily to avoid build-up of debris.
  • The nonfood-contact surfaces of the ice machine had an accumulation of mold/mildew.
  • The outside dumpster is not covered. Receptacles and waste handling units for refuse, recyclables and returnables shall be kept covered.
