Chef meet farmer; farmer meet chef

A quick note about a great new company looking to create and solidify relationships between restaurants and local fishermen and farmers.

As you all well know there has been a major shift in mindset as to the importance of sourcing locally produced and grown food . There is a new company around called Trace and Trust that I would like to tell you about. I have been working with them at Brick Alley Pub for the past several months and I love what they are doing. Their web site describes their founding as:
In 2010, a few experienced New England fishermen, a few dedicated chefs and a few supporters sat down to discuss how they could collaborate to get the highest quality, most local and freshest seafood from the ocean to customers’ plates. The conversation led to a tremendous investment of time and resources by fishermen and families in Rhode Island, resulting in their building a new fisherman-owned seafood distribution company.
Here is how it works: I send my wish list to the boat captain (s), They respond and let me know what they have and how much of it, When their day boat returns to shore they immediately deliver it to the restaurant, Each delivery comes with it's own number that gets inputted into the Trace and Trust website, The site then provides me with info about the boat, captain, location and time of catch, and a QR code that I can provide to our Guests. 
In addition to seafood Trace and Trust has also partnered with farmers raising cattle, duck, hogs, and are looking to add produce in the very near future. One of the best parts of their business model is that they do not take the roll of middle man. They create real personal relationships between owners, chefs, farmers, and fishermen. Look for featured items at Brick Alley and at other restaurants around the region this summer and in the future.
