The drain plug for the outside dumpster is missing. Drains in receptacles and waste handling units for refuse, recyclables, and returnables must have drain plugs in place.

The wall behind the 3-bay sink is in poor repair and is no longer smooth, durable and easily cleanable(malite) and must be properly replaced.

Several raw animal foods were stored above ready-to-eat foods in the walk-in refrigerator such as raw chicken stored above raw fish and beef. Raw animal foods must be separated from raw ready-to-eat food such as vegetables during storage.
Food contact equiptment such as the slicer and can opener had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch.
The chlorine sanitizer concentration for the sanitizing cycle of the dishwasher was non detect. After testing many times, service was called and PIC was able to fix leak in feeder tube and a new chemical bucket was used. Old chemical bucket was disposed of. Chlorine sanitizing solutions must be between 50-100 ppm.
Soup which was prepared in advance, was not cooled to 70 degrees in 2 hours and then to 41 degrees F within 4 hours. Disposal of soup completed. Cooling procedures reviewed.
Various foods are stored on the floor in the walkin freezer. Food must be stored at least 6 inches above the floor.
Wet wiping cloths are not stored in a chemical sanitizer between uses. Wet wiping cloths must be stored in a chemical sanitizer at the appropriate concentration.
Inspector observed utensils stored in stagnant water. During pauses in food preparation, utensils must be stored in a clean location. Proper proceedures reviewed.
Cleaned equipment and utensils are not stored inverted.
Not washing dishes in 3 compartment sink. Inspector observed employee washing dishes in food prep sink.

The deli slicer was not cleaned to sight and touch.
Sliced pepperoni was observed in a cardboard box in direct contact with the cardboard box. Pepperoni was disposed of.
The pre-flush spray hose at the three bay sink is hanging below the flood rim. A plumbing system shall be installed to prevent backflow of a liquid or gas contaminant into the water supply by providing an air gap or installing an approved backflow prevention device.

Raw animal foods were not stored properly to prevent cross-contamination. Except when combined as ingredients, different types of raw animal foods must be separated from each other during storage by using separate equipment or arrranging each type of food in equipment so that cross contamination of one type with another is prevented.
Many foods stored in the walk-in cooler were not held at 41*F or below overnight. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Owner discovered the circuit breaker had tripped overnight causing the walk-in cooler to stop working. Circuit breaker was turned back on and ambient temperature comming from condensor was 35*F. Disposal done on all PHF(48*F). Facility must ensure that circuit does not continue to trip and if it does foods not held 41*F or below must be disposed of.

Knives stored between equipment. This is not a washed and sanitized surface. Knives MUST NOT be stored in these areas. Knife washed and sanitized.
(Bowls) are being used as scoops in containers of dry ingredients such as flour. Utensils used to dispense non-potentially hazardous foods such as sugar and flour must be stored in the food item with their handles above the top of the food within the container. Single service cups disposed.
Facility using plastic flower pots to store foods. This is not an approved food contact surface. Approved food grade material for food contact surfaces approved only. Flower pots taken out of facility. Foods stored in these containers disposed of.
Some nonfood-contact surfaces have an accumulation of dust, dirt, food residue and other debris. These areas must be cleaned as often as necessary to prevent such build-up of debris.
Ceiling tiles and floor tiles of the cook line are in poor repair. Owner states he was waiting for hood to be cleaned then he will replace/repair. Hood was cleaned overnight on 2/27/12.
