The Loudoun County Health Department recorded violations at several facilities around the Ashburn area during recent inspections.
ASHBURN, VA — Several facilities around Ashburn recorded violations during health department inspections from Nov. 2 to Nov. 7.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- Non-food contact surfaces of various pieces of equipment including walk in cooler shelves, walk in cooler walls, and prep cooler lids are noted in need of cleaning.

- No paper towels provided in the paper towel dispenser at the hand sink located at the end of the line closest to the prep kitchen/walk in cooler.
- Observation 1: Raw animal proteins (burger patties, beef)improperly stored over ready to eat burger toppings (lettuce, tomatoes) in the pull drawer cooler on the cook line. Observation 2: Raw animal proteins improperly stored on the speed rack in the walk in cooler. Raw ground beef stored over whole muscle meat beef and fish.
- The meat slicer was observed with an accumulation of dried on food debris in hard to reach areas (behind blade, below handle attachment)
- A large lexan container of queso in the walk in cooler was noted as improperly cooled to prevent the growth of harmful bacteria. According to the PIC The queso was prepared the previous day (11/1) and is registering at 62F.
- Multiple TCS foods are cold holding at improper temperatures on the cook line and in the walk in. Hummus (50F), pulled pork (50F), buffalo chicken (45F), cut tomatoes (47F), sausage( 45F) wings (45F) EHS observed pans of prep on the line units double panned which could contribute to the higher temperatures. Garlic compound butter and carmelized onions stored out in the open air on the line (not under temperature control or time control). EHS informed the PIC that these two food items would be considered TCS foods and would need time or temperature control.

- Handwashing sink to the right of the grill found to be used to store Pots.
- Observed the following items cold holding out of temp in the Walk In Unit: Raw Pork 45 F, Raw Beef 44F, Milk 45F, and Bean Curd 45F. Also, Curtido (Pupusa Slaw) at 48F in the 2 DR UC by the Dishwashing Area.
- Observed the 2 DR UC True by the ice bin to not have an ambient air thermometer inside.
- Observed several live fruit flies observed in food prep areas in kitchen and in restroom.
- Observed the following in use utensils stored improperly: Ice Scoop on top of Ice Bin, Several Tongs on oven handles, cup lying flat inside vats of Horchata, Fruit Juice, and Ready to Eat Strawberries, knives in-between prep tables, and Tongs resting on top of curtido.
- Walls behind the 3 VAT and the wall connecting to the Walk In Cooler observed to be unclean.
- 2 Ceiling Tiles observed missing/ not attached over the 3 VAT Sink Area.

- Observed no hand washing signage instructing employees to wash hands at the following hand sinks: men's restroom, women's restroom, kitchen hand sink by grill.
- Soap not available at hand sink near grill.
- No paper towels provided at both kitchen hand sinks.
- Observed ice machine deflector with accumulation of debris.
- Observed no test strips, that were not expired, available to measure quat sanitizer solution concentration.
- No hot water is observed at all sinks. Water does not flow from hot water faucets. Hot water minimum requirement not met at 3 compartment sink or hand sinks.
- The following areas of the physical facilities observed with accumulation of debris: light shields throughout kitchen, floors beneath fixed equipment throughout kitchen, exterior surface areas of equipment to include hot water tank, dry storage area, area behind 3 compartment sink, ice machine, and shelving.

- This establishment was unable to provide written proof that employees have been trained in the signs and symptoms of food borne illness and how to properly report them. No Employee Health Policy on Premise.
- There is no signage at the hand washing sink directly behind the front counter reminding employees to wash their hands.
- A container of cooked chicken wings, cut lettuce and chicken dippers was observed with no date marking, stored in the salad station cooler.
- This establishment produces/sells marinara sauce that is formulated so that it does not fall within the time/temperature requirements set forth by the VA food code for time/temperature control foods (TCS), thus requiring a HACCP plan. The establishment was not able to provide this documentation when requested.
- A sanitizing bucket with cloths and sanitizer was observed stored on the floor under the hand washing sink directly behind the front counter.
- This establishment uses Quat sanitizer for food contact surfaces. Testing strips for this sanitizer were found unopened, and compromised (wet). Testing of sanitizer is not being routinely performed.
